Introduction

Ingredients

4 ounces Colmans Mustard Powder
1 cup malt vinegar
6 large eggs
3/4 C Raw Sugar
Directions
Whisk together mustard powder and malt vinegar in a medium aluminum or glass mixing bowl. Cover and let sit for at least 6 hours to overnight.
Put bowl over a bowl of boiling water (1-2" of water) to make a double boiler (or use an actual double boiler). Add eggs and sugar, whisk together. Use a rubber spatula to continuously scrape the cooking eggs from the bottom of the bowl and then whisk it into the mustard, until it forms stiff peaks. Let cool and store in airtight containers.
Serving Size: 32 Tablespoon servings
