healthy, yummy carrot cake

Ingredients
.25 cup of canola oil, .5 cup of honey, 3 eggs well beaten, 3 cups of whole wheat flour,.5 cup apple sauce,1 tbsp backing powder,.75 tsp salt,1 tbsp cinnamon, .75 tsp nutmeg, 1 tbsp vanilla,.5 cup milk, non fat,1.5 cup grated carrots, 1 cup unsweatened toasted coconut1 cup crushed pineapple
Directions
Cream together oil, honey, eggs & applesauce. Sift together flour, baking powder, salt, cinnamon, nutmeg. Mix together. Add milk, carrots, pineapple, coconut and raisins. Bake in a 13 x 9" pan at 375* for 25 min....Enjoy! Makes 24 servings. Add 1tbsp cream cheese icing: 2 pkg fat free cream cheese, 1tbsp vanilla and .5 cup honey. Whip together & spread.
