Vanishing Oatmeal Raisin Cookies

1 cup (2 sticks) margarine, softened1 cup firmly packed brown sugar1/2 cup granulated sugar2 eggs1 tsp vanilla extract1 1/2 cups all purpose flour1 tsp baking soda1 tsp cinnamon1/2 tsp salt (optional)3 cups Quaker Oats (quick or old fashion, uncooked)1 cup raisins
heat oven to 350*F. Beat together margarine and sugar until creamy. Add eggs and vanilla; beat well.
Add combined flour, baking soda, cinnamon and salt; mix well. Stir in oats and raisins; mix well.
(For best results, soak raisins some before making so they don't dry out while baking)
Drop by rounded tablespoons onto ungreased cookie sheet. Bake 10-12 minutes or until golden brown. Cool 1 minute on cookie sheet; remove to wire rack.
Makes 4 dozen
Bar Cookies: Bake 30 to 35 minutes in ungreased 13x9 inch metal baking pan.
