Green Salad with Anchovy Dressing

Ingredients
2 Tbsp Anchovy paste1 Tsp Dijon Mustard2 Tbsp red wine vinegar5 Tbsp extra virgin olive oilKosher salt and fresh cracked black pepper4 cups bite size pieces romaine lettuce3 scallions, chopped1 small cucumber, thinly sliced
Directions
In a large wooden salad bowl, put in anchovy paste. Whisk in mustard and vinegar. Drizzle in the olive oil while whisking to create an emulsion. Adjust the seasonings with and salt and black pepper, to taste. Add the romaine, green onions and cucumbers to the bowl and gently toss to coat the leaves with the dressing. Serve immediately.
