Roasted Corn and Tofu Pizza

4 oz pizza crust35 grams pizza sauce1/2 ear of corn (kernels cut off)1 Tbsp olive oil1/2 c. tofu (drained and cut into bite sized pieces)Dried BasilLemon Juice 2 cloves garlic0.5 Tbsp olive oil3 mushrooms (chopped)2 oz. Mozzarella cheese
1. Roast corn and olive oil in broiler until browned and softened
2. Marinate tofu in the basil, lemon juice, garlic, and olive oil for about 30 minutes. Fry when ready to use.
3. Compile pizza by spreading pizza sauce onto crust, add roasted corn, tofu, mushrooms, and mozzarella cheese.
4. Bake at 400 degrees for 15 minutes or until crust and cheese are browned bubbling.
