Potato-Leek Soup

Ingredients
7 c vegetable broth 6 leeks4 medium white potatoes (yukon gold or similar)2 T unsalted butter1 tsp salt
Directions
Sautee finely chopped leeks and chunked potatoes in 2T melted butter for 10 min, covered, over low heat. Remove cover, add 7c vegetable broth and 1 tsp salt, bring to a boil, boil uncovered for 35 minutes.
