Weight Watches Minced Meat Pie

Ingredients
500 grams lean beef minced 2 carrots grated1 brown onion diced 2 zucchini grated 2 potatoes grated and water squeezed out1 cup parsnip grated1 cup water2 beef stock cubes crumbed 1 tbs cornflour11 sheets Filo pastrySalt and Pepper Canola Cooking spray
Directions
Pre heat oven to 180c
Coat pie plate with cooking spray
Brown onion and mince
Add veggies and ½ cup of water & stock cubes
Bring to boil, cover and simmer for 25 mins or until veggies are tender adding more water if necessary
Thicken with cornflour dissolve in a little water, ensuring that the mixture is not runny.
Season to taste
Cool slightly while preparing the pastry
Line the pie plate with 6 filo sheets, lightly spraying the filo in-between each layer.
Fold pastry in to shape dish. Pour filling into pastry and top with remaining sheets of filo spraying in-between & on top
Bake for 20 or so minutes or until golden brown.
