Mashed Vegetables

Ingredients
1 russet potato, chopped1 sweet potato, chopped1 cup broccoli florets1 cup cauliflower florets1/2 cup baby carrots1/3 cup coconut milk1/3 cup buttersalt, pepper, and garlic powder TT
Directions
Steam or boil vegetables until soft.

Melt butter in a large pot and add vegetables and coconut milk. Mash with a potato masher or an immersion blender. You could also use a food processor, but you won't need a large pot.
