Ingredients
White or wheat flouroats (ground in blender or whole)sugarbaking powdersaltflax seed mealmilk (I used 2%, but you can also use 1% or skim or soy, etc)2 tbsp olive oil1-3 tsp of olive oil for putting in pan to cook pancake. Aim to use 1-2 tsp (stretch that oil out!)Fig preserves, fruit preserves, jam, apple sauce, fresh fruit, canned fruit, nuts as toppings (all optional!)
Directions
Mix all dry ingredients and whisk until crumbs are gone, then add wet ingredients, mix until smooth. Then use a 1/4 cup to scoop up enough mix for the first pancake! Cook in pan with about 1 tsp oil (or less or use none or use a non-stick cooking pan). Allow to cook on each side for about 1 min. Then flip to other side. I made 3 pancakes for myself. So this recipe has 2 servings (3 pancakes per serving). Serve with nothing or drizzle with honey or with any fresh fruit preserve, fresh fruit like apples or pears, canned fruit would be fine (drain the juice!) or apple sauce! Enjoy!
