6 sweet potatoes, peeled and cut into bite-sized chunks1 medium red bell pepper, diced3-4 green onions, chopped, include green parts1/4 c red wine or cider vinegar1 T olive oil1 tsp ground cumin1 tsp sweet Hungarian paprika
boil the chopped sweet potatoes until fork-tender -- about 10 minutes (don't let them get mushy). Drain and immediately run cold water over them to stop them cooking. Drain again, and set them aside to cool. Add peppers and onions. Whisk together vinegar, oil, cumin and paprika to make a dressing. Pour over potatoes and gently stir to cover all. Refrigerate.
