Ingredients

2 tsp olive oil1 small onion, sliced1 cup sliced mushrooms1/2 cup sliced zucchini1 packed cup fresh spinach1 tsp basil1 tsp oreganosalt and pepper to taste 4 eggs, beaten1 tbl cream
preheat oven to 400 degrees F
in oven proof pan, heat olive oil
add onions and sautee two minutes until softened
add remaining veggies, herbs and salt and pepper to taste
saute until veggies are tender
beat eggs with cream and pour over veggies
cook 2-3 minutes on stove, and then transfer pan to oven 5-8 minutes until top is set.
serve with tomato basil sauce, or bison ragu
