Cleansing Curry

Ingredients
2 Tbsp. olive oil,2. Tbsp. curry powder,1 cup water,2 medium potatoes- cubed,2 large carrots- sliced,2 cups green beans- sliced,1 tsp. salt
Directions
Heat oil in a large pot. Add curry powder and water, then bring to a boil. Add potatoes, beans, and carrots. Simmer 20 to 30 minutes untl veggies are tender. Add salt to taste. Garnish with cilantro if desired.

I like to serve over a bed of rice!
