Alisha's potato soup

Ingredients
*Potato, raw, 5 large (3" to 4-1/4" dia.)Chicken Broth, 4 cup (8 fl oz)Milk, nonfat, 2 cupButter, salted, 2 tbsp*Flour, white, 2 tbspOnions, raw, 1 medium (2-1/2" dia)Garlic, 5 clovesNutmeg, ground, .5 tsp
Directions
Peel and par-boil your potatoes until barely fork-tender, drain, and set aside. In your pot, melt your butter and sweat your onions and garlic. Add flour and mix into a paste of=ver medium heat; toast this until you notice a nutty smell. Add milk and spices and whisk until smooth. Add potatoes back in and add about half of your chicken broth. Stir and bring to a boil...at this point you will be able to see the final thickness of the soup...add more chicken stock if it's too thick. Salt and pepper to taste and serve.
