Caesar Salad Dressing

Ingredients
Romaine LettuceCroutons - homemade w/ french breadOlive OilGarlic clovesSaltRed Wine VinegarLemon JuiceWorcestershire SauceDry MustardGround PepperParmesian Cheese, grated
Directions
Romain Lettuce: Wash, drain, chill

CROUTONS:
Cut french bread in 1/2 inch squares. Saute in olive oil with 2 cloves garlic until golden. Drain on paper towel.

SALAD DRESSING:
- Crush 2 cloves garlic with 1 tsp. salt in a wooden salad bowl (lg), 2 minutes.
- Discard 2/3 of the salt mixture, leave rest.
- Add 6 T. Olive Oil and beat 1 min. w/ fork.
- Add 2 T. Red Wine Vinegar, 1 T. Lemon Juice and beat with fork until blended.
- Add 1/2 tsp. salt, 1/2 tsp. Worcestershire sauce, 1 tsp. Dry Mustard, fresh ground pepper, 1/4 C. grated Parmesian Cheese.
- Beat mixture with fork.

MIX: Place torn lettuce into bowl and toss. Put croutons in last.
