bruchetta chicken

Ingredients
6 skinless boneless chicken breasts1/2 cup roasted red pepper salad dressing1 large onion chopped1 large green pepper chopped1 large red pepper chopped3 stalks of celery chopped1/2lb. mushrooms sliced1 can tomatoes ( can used stewed if preferred)1 cup minutes rice ( white or brown)1 cup water1 tbls garlic or to taste1 tbls oregeno or to taste1 tsp pepper1 tbls Italian spice or to taste2 cups grated cheese of choice.
Directions
In a large skillet over medium heat, pour in salad dressing (using like cooking oil) and cook chicken until cooked through. Remove chicken from pan and set aside. Sauted the chopped vegetables until tender. Pour in canned tomatoes, rice, water and spices. Stir until well blended. Place chicken on top of rice and veggie mix. Cover and cook until rice is cooked. Cover with shredded and cheese and cover until cheese is melted. Serve while hot.
