1 cup low-fat buttermilk3/4 cup nonfat milk2 large eggs1 tablespoon honey6 tablespoons pure maple syrup1 medium apple, diced3/4 cup all-purpose flour3/4 cup whole-wheat flour2 teaspoons baking powder1/2 teaspoon baking soda1/2 teaspoon cloves1 teaspoon cinnamon1/2 teaspoon nutmeg2 tablespoons butter
Dice apples, saute in the butter, cinnamon, cloves, and nutmeg until soft. While cooking apples combine flours, soda, and powder. In a separate large bowl combine milks, eggs, honey, syrup. Slowly add dry mix to wet. Add soft apples to batter. Pour batter onto non-stick pan or skillet on medium heat. Flip when batter begins to bubble, cook until both sides are golden brown.
