Erin's Camping Couscous

Ingredients
1.5 cups FF Cottage Cheese (Shoprite Brand)1 cucumber, with peel3 plum tomatos1 red bell pepper1/2 large onion1 box (8.8 oz.) Israeli Couscous (OSEM brand)Light Balsamic Vinagrette (Great Value Brand)
Directions
-Cook couscous per box instructions.
-Dice all vegetables (however large you want, I cut mine on the smaller side) and combine in large mixing bowl with cottage cheese and balsamic vinagrette.
-Add cooked couscous to vegetables, and mix until all ingredients are combined.
-Let cool, enjoy hot or cold!
