Fresh Corn & Tomato Salad

Ingredients
3 large ears fresh corn, kernels cut from cob (about 3 cups)1 large shallot, diced (about 1/4 cup)1 medium tomato (about 8 ozs), cut into 1/2-inch pieces (about 1 cup)1 medium zucchini (about 8 ozs), cut into 1/2-inch pieces (about 1 cup)5 large fresh basil leaves, thinly sliced 1/3 cup Italian Vinaigrettesalt and ground black pepper (optional)
Directions
In large bowl, gently toss all ingredients until well combined. If desired, stir in salt and pepper to taste. For best results, cover and refrigerate 30 minutes before serving; salad can be prepared up to overnight. Makes about 6 cups.
