Spinach-Kale Pesto

5 cups (about 1/2 bunch - use the rest for kale chips!) kale, stemmed and torn into pieces3 cups spinach1/2 cup almonds, toasted4-6 cloves garlic3-4 tbsp olive oil. The fruitier the better - and you can get away with using less!1 tsp coarse salt, with more as needed
Using a food processor or blender, process kale, spinach, almonds, garlic and salt on high until paste-like and crumbly, scraping down the sides as necessary. Drizzle in olive oil and process until smooth.
Use over pasta, as a spread in sandwiches or on salad!
Serving Size: makes about 1.5 cups
