Ingredients
1.5 cups quinoi1 cup green pepper (chopped)1 cup red pepper (chopped)1/4 cup onion (chopped)1 cup carrots (chopped)1.5 cup celery (chopped)1 cup sliced black olives1 cup walnut pieces1 cup dried cranberries4 cups parsley (chopped)Dressing:1/2 cup safflower oil1/4 cup apple cider vinegar1/4 cup lemon juice1 tablespoon anchovy paste (optional)1 teaspoon salt (optional)
Directions
Soak 1.5 cups quinoi in cold water and let stand on counter for 1 hour. Drain and rinse. Cook quinoi for 10 minutes, drain and cool in sieve.
