Scrambled Tofu Breakfast Burritos

2 small corn tortillasFilling: - 3oz/85g extra firm tofu - 1/4 cup diced yellow onion - 1/2 cup thinly sliced mushrooms - 1 clove of garlic - 1/4 cup grated carrot - 1 tsp lemon juiceSpice Blend: - 1/2 tsp ground cumin - 1/4 tsp ground thyme - 1/4 to 1/2 tsp ground paprika - 1/4 tsp ground tumeric - 1/4 tsp salt
Heat oil in skillet over medium heat and saute onions for 3 minutes, then add the mushrooms for an extra 5 minutes, the garlic for an extra 2, and then stir in the spice blend. Deglaze the pan with a little water or soy sauce.
Crumble in the tofu; mix well. Let cook for about 15 minutes, stirring occasionally, and making sure the tofu does not stick to the pan. Add lemon juice.
Fold in carrot. Serve with salsa on tortilla and fold. Add a slice of vegan cheese if you wish; not included in the calorie count.
