Spicy Black Beans

1/4 cup vegetable broth1/2 cup onion2 garlic cloves, minced2 14.5-oz cans of petite diced tomatoes, drained2 tbsp canned chopped green chilies2 15-oz cans black beans, rinsed and drained1 tbsp chopped cilantro or parsley1/2 tsp cumin1/2 tsp ground red pepper1/4 tsp chili powder
Makes 4 servings! 1 cup of black beans is a serving.
*Serve as a starch.
-Heat vegetable broth in non-stick skilled over medium heat.
-Add chopped onion and garlic, saute in broth until tender.
-Add tomatoes and chilies.
-Reduce heat and cook, uncovered, 6-8 minutes until mixture thickens.
-Stir in beans and remaining ingredients.
-Cover and cook 5 minutes.
