Brown Spanish Rice

Ingredients
1/4 cup white onion1/4 cup green chilis (subsitute: celery or carrots)1 cup petite diced tomatoes1 1/2 cup brown rice2 cups vegetable broth (substitute: beef or chicken broth)1 cup water1/2 tsp cayenne pepper1 tbsp paprika1/2 tsp salt
Directions
Makes about 6 servings. Serving size: 3/4 cup

-Spray nonstick cooking spray on bottom of medium pan.
-Saute onions for 3 minutes on medium.
-Add spices, tomatoes, vegetables, stock, water, and rice.
-Bring to a boil, stirring occasionally.
-Reduce heat to low, cover, and simmer for 45 minutes.
