Falafel Balls with Yogurt and Dill Dip

Ingredients

3/4 cup chick peas1/4 cup cooked brown rice1/4 tsp cumin1/4 sp parsley1/4 tsp red pepper flakes-2 tbsp yogurt1/2 tbsp lemon juice1/2 tbsp chopped onion and garlic1/4 tsp dill
*Add a protein and 2 cups of veggies for a complete meal!
-Preheat oven to 400 degrees.
-Mash chick peas on plate with a fork and add water to make a softer mixture.
-Add brown rice and seasonings and mash together.
-Spray cookie sheet with cooking spray.
-Roll mixture into small balls and press onto cookie sheet.
-Spray tops before cooking.
-Bake 20 to 25 minutes.
-Prepare Yogurt and Dill Dressing by mixing all ingredients.

I tried this last night and it was GREAT! I was concerned that it wouldn't really taste like Falafel, but it totally did! The sauce was a little garlicky (and I LOVE garlic) so I will try half as much next time. Everything else seemed right on! Each serving is HUGE - I could only eat half of one! - 3/30/08
