2 TBSP - Olive Oil1/2 C - onions1 C - Carrots, sliced2 - large celery sticks, sliced1 15 oz. can crushed tomatoes1 garlic clove, minced1 TBSP - curry powder1 TBSP - coriander seed (crushed)2 TBSP - Turmeric (ground)1 TBSP - Cayenne Pepper1/2 TBSP - Red Pepper Flakes8 Cups organic vegetable broth3 Cups water3 Cups Red Lentil (dried, sorted and rinsed)1 Tomato, big, peeled and cut into piecesSalt and pepper to taste, optional
Stock pot, add oil and get hot. Then add all seasonings, onion, garlic, celery, carrots. Keep stirring while you Cook 5 mins simmering. Then add can tomatoes, cook an additional 10 mins on LOW Simmer.
Add your Lentils, the big tomato that is peeled and cut up, 8 cups of vegetablae broth with 3 cups of water.
Bring to a boil then simmer WITH lid for 30 mins. Salt to taste is optional..
