Bran-Flake Muffins

1 Cup whole wheat flour1/2 cup rolled oats1/2 cup oat bran1 1/2 cup ready to eat wheat bran flakes2 1/2 tsp baking powder1/2 tsp grated nutmeg1/2 cup chopped dried apricots1 T grated orange rind1 cup low fat buttermilk3 egg whites1/4 cup honey1 T canola oil
In a large bowl, mix the oat flakes, flour, oats, oat bran, baking powder, and nutmeg. Stir in the apricots and orange rind.
In a medium bowl, blend the buttermilk, egg whites, honey and oil.
Pour the liquid ingredients over the flour mixture. Stir to combine, but don't overmix.
Line 12 muffin cups with cupcake papers. Divide the batter among them, filling each cup almost to the top. Bake at 375F degrees for 18 to 20 minutes or until the muffins are lightly browned.
