1 cup chopped onion1 cup diced muchrooms1 cup chopped bell pepper1 cup quinoa, cooked4 whole eggs2 egg whites1.2 cup fat-free shredded cheeseblack pepper to taste
Preheat oven 350 degrees F. Saute onions in cast iron skillet until golden. Add remaining vegetables and cook until soft. Add quinoa. Reduce heat and pour eggs over vegetables. Heat over low heat. When eggs start to become solid, add cheese to top. Heat until the edges is firm. Transfer cast iron skillet from stove to oven until center is cooked.
