Asparagus Wrapped in Proscuitto

Ingredients
1 lb. asparagus (36 spears)18 thin slices proscuitto (~9 oz)1 tsp. salt2 T lemon juice1 T olive oil
Directions
Fill a large bowl with ice and water; set aside.

Prepare asparagus by snapping ends off and rinsing. Bring a large pot with about 2 inches of water and salt to a boil. Put asparagus in boiling water and boil for 2-3 minutes only depending on thickness.

Remove asparagus from boiling water and immediately plunge into ice water. Leave until completely cool with drain and pat dry with a paper towel.

Juice a lemon to get 2 T lemon juice and whisk in 1 T olive oil. Toss cooled asparagus in vinaigrette.

Cut each slice of proscuitto in half. Take one asparagus spear and roll it in proscuitto. Set aside in a serving dish. Repeat until all spears are wrapped. Pour vinaigrette over, cover with plastic wrap and chill.

Makes 36 spears. Calorie counts are for each piece.
