Pork Chops Breaded in Pork Rinds

Ingredients
Pork skins, plainPork TenderloinCajun SpiceOlive Oil, Kirkland, Extra Virgin Olive Oil, 1 tbsp Egg, fresh, 1 small
Directions
1. Use food processor to crush pork rinds, mix with cajin spice, to taste.
2. Dip pork loin into egg mixture and coat using crushed pork rind mixture.
3. Using 1 T olive oil, sear both sides of pork loin, and put top on skillet to finish cooking the pork.
