Salmon Pot Pie

Ingredients
9 0z. Atlantic Salmon2 cups sliced portabello mushrooms1 cup chopped sweet red pepper1/2 white onion chopped1/2 cup raw carrots chopped1 large raw potato, chopped4 Tbsp shed spread1/8 cup all purpose flour12 ounces light soy milk1 pillsbury 9: pie shell
Directions
cook salmon for 5 minutes in skillet coated with vegetable cooking spray. set aside.
Saute vegetables in olive oil until tender. set aside.
melt shed spread in skillet. blend in flour, add milk until slightly thickened. Add all ingredients to casserole dish and top with pie crust. Bake at 375 until crust is brown.
