Gluten Free Onion Rings

Ingredients
1 Large Onion2 Tb Ground Flax1 large Egg1/4 c skim milk1/2 c fine grind cornmeal1/4 C canola oil
Directions
1. Slice the onion into large rings.
2. Heat oil in a skillet over medium-high heat
3. Set up dredging stations. In the first put the flaxseed, in the second, whisk together the eggs and milk, and in the third, place the cornmeal.
4. Dredge onion rings from the flax, to the egg wash, then through the cornmeal. Place immediately into sizzling oil.
5. Once browned on one side (appx. 3 minutes), flip with a fork.
6. When browned completely, place on paper towel lined plate. Let dry. Transfer to another paper towel lined plate to soak up excess oil. Sprinkle with small amount of salt (optional).
