Yummy Healthy Greek-Yogurt Cherry Cheesecake

Ingredients
Preheat Oven to 350F.3 Eggs1/4c Diabetic Sweet, Original1t Salt2t Vanilla32oz Oikos Greek Yogurt, Fat Free, Vanilla1 Can Lucky Leaf Red Tart Pitted Cherries, Water Pack1 1/2 T Corn Starch1/2 T Margarine1/2T Diabetic Sweet
Directions
Beat Eggs. Mix in Diabetic Sweet, Salt, and Vanilla. Mix in Yogurt. Spray 9-10" Pie or Cake Pan or in 9" square pan. Pour into pan. Bake 50 Min at 350F. Test with knife. Cool.

Drain Cherry Juice into small sauce pan. Add Corn Starch. Stir over medium heat until thick and CLEAR. Remove from heat. Add Margarine and 1/2T Diabetic Sweet. Stir. Stir in Cherries. Cool. Top Cheese cake with cherries. Refrigerate.

Serving Size: Cut into 9 pieces
