Ingredients

one large and one medium/small eggplant1/3 Cup Lemon juice1/4 Cup Tahini2 Tbsp Sesame Seeds2 cloves Garlic, mincedsalt/pepper to taste1 Tbsp Olive Oil
Poke the eggplant all over with a folk
Place on cookie sheet and bake in 375 degree oven for 40 minutes or until soft
Peel eggplant once able to hold
cube or chop into chunks
place eggplant, lemon juice, tahini, sesame seeds and salt/pepper (to taste) in food processor; blend until combined
Put in serving bowl, and stir in olive oil.
Refrigerate until chilled, overnight is better to let flavors meld.
Serve with vegetable crudite or pita chips
