Spicy spinach and egg muffins

Ingredients
1 - 16 ounce container of liquid egg whites1- 28 ounce bag of frozen spinach cooked,drained and cooled4-6 green onions chopped1/2 red bell pepper chopped2 Tbs real bacon bits1 Tbs crushed red pepper1/2 cup parmesan cheese1/4 cup reduced fat cheddar or Colby cheese3 slices swiss cheese cut into 8 squares each
Directions
Combine thoroughly all ingredients except Swiss cheese squares in a large mixing bowl

Spoon half of mixture into a muffin pan sprayed lightly with cooking spray

Top each muffin with a square of swiss cheese

Bake in a 350 degree oven for 20 minutes
cheese will be golden brown on top

Serving Size: makes 24 "muffins"
