Wilted Leaf Salad

Fresh spinach (1 bag or 10 oz)bacon (5 slices chopped)2 hard boiled eggs (chopped fine)1 scallion or green onion bunch, choppedCider Vinegar (roughly .5 cup, enough to coat leaves)canola oil (roughly 2 Tbsp)salt
Put fresh spinach, chopped green onions, and the two chopped hard boiled eggs in a bowl and mix together. Add enough cider vinegar to coat the leaves lightly. Add a dash of salt to taste. This might start to wilt the leaves a little bit, it's ok, it's supposed to do that.
Chop up five pieces of bacon (we use center cut because it has less fat) and put in a hot pan. Add roughly 2 Tbsp of canola oil to the pan as well. Cook the bacon until it is brown and crispy and then carefully remove the bacon from the pan and put it on top of the salad. Then, take the bacon grease and oil in the pan and pour it on top of the salad. The salad will really wilt at this point. Quickly toss the salad and then serve!
