Eggplant Pizza Circles

1 eggplant20 ounces spaghetti sauce1 egg1 cup break crumbs8 oz mozzarella cheese
Crack one egg in a bowl mix it together. Put the breadcrumbs in another bowl. Cut the eggplant in 1/4 inch slices (so they look like small circles). Take one slice and place it in the egg, coat both sides and place it in the breadcrumbs.
Put it in a nonstick pan. Do this with a couple more slices until you have enough in the pan. cook these on medium heat until they are brown on one side, then flip the eggplant. Once both sides are brown, place these in a small 9 inch square pan that has been sprayed with PAM.
Coat the rest of the slices. While they cook, cover the browned eggplant slices with spaghetti sauce and 1/2 oz of cheese. When the other slices are browned, place an eggplant slice on top of the cheese, cover that with spaghetti sauce.
Cover the pan with foil, place in 450 degree oven for 15 minutes. Add the remaining cheese on the slices and place in the oven for an additional 5 minutes, and eat.
