Summer Chicken Salad Croissant Sandwich

Ingredients
12 oz. Poached Chicken Breast, Chopped or Shredded (can use canned chicken also)1/2 Cup Chopped Celery1/2 Cup Dried Cranberries2 TBS Light Mayo2 TBS Light Sour Cream2 TBS Poppy Seeds4 Slices Honeydew or Cantaloupe Melon4 Small Croissants(Option 2 Large Croissants halved)
Directions
Mix together all ingredients until blended well

Slice croissants in half horizontally.

Spead Chicken Salad onto croissant bottom, top with upper half.

Serve on plate garnished with parsley or mint leaf.

Serve with slice of fresh melon (honeydew or cantaloupe)

Serving Size: 1 small croissant or 1/2 large croissant
