Plum Cobbler (Gluten Free)

1/2 cup plus 1 Tbsp granulated sugar4 cups plums, sliced and seeded2 Tbsp corn starch1/4 teaspoon ground cinnamon1 cup Bob's Red Mill Gluten Free Flour Mix1/4 tsp Xanthan Gum1 1/2 teaspoon baking powder1/4 teaspoon salt1/4 cup butter1/4 cup milk1 egg, lightly beaten
1) Preheat oven to 350°F
2) In a large bowl, combine 1/2 cup white sugar, plums, cornstarch and cinnamon. Place the fruit mixture in a 8x11.5 casserole pan.
3) In a medium bowl, combine the remaining 1 Tbls of sugar, flour, xanthan gum, baking powder and salt. Cut the butter in with a fork or pastry blender until the mixture resembles coarse crumbs. Stir in the milk and egg until just moistened.
4) Drop batter on fruit, or if desired, spread batter in stripes. Bake in a 350°F oven for 35 minutes.
Really good served with vanilla ice cream (I use coconut milk ice cream)!
