3 tablespoons olive oil2 green peppers, cut up into small pieces1 red pepper, cut up into small pieces2 onions, cut up into small pieces1 can diced tomatoes (can use with basil and oregano)1 tablespoon chili powder (can add more to taste)1 tablespoon ground cumin1 tablespoon dried basil1 tablespoon dried oregano1 package ground veggie "beef" (optional)1 can baked vegetarian baked beans1 can corn1 can chick peas
In a large pot, saute garlic, onion, and peppers in olive oil for approximately 10 minutes. Add diced tomatoes and spices. Stir and cook uncooked for 30 minutes over medium heat, stirring occasionally. Add veggie beef, cook for 5 minutes more. Add baked beans, corn, and chick peas. Stir and add salt to taste. Cover and cook over low heat for 20 minutes. Can be served over brown rice with sour cream and shredded cheese.
