Mediterranean Lentil Meatballs

2 cups dry Lentils4 cups Water1/3 cup Old Fashioned Oats1 tsp Garlic1 tbsp Worcestershire Sauce1 tbsp Reduced Sodium Soy Sauce1/4 cup fresh Basil3 to 4 Sun Dried Tomatoes1/4 cup Onion1 tsp Dijon Mustard1/4 cup Kalamata Olives
Cook Lentils
Preheat oven to 375 degrees.
Combine lentils, oats, garlic, worcestershire sauce, soy sauce, basil, tomatoes, onions, and mustard in a high speed blender or food processor and pulse mixture until a think, chunky batter forms. Stir in olives and season to taste.
Form into 18 meatballs and place on prepared cookie sheet. Cook for 20 minutes, flipping once during cooking.
Serving Size: Makes 18 meatballs. Serving size calculated at 3 meatballs.
