Tuna Noodle Cassarole

2.5 oz No Yoke Broad Noodles, or other yolkless pastacelery, 1 cup chopped, about two stalksmushroom, 1 cup chopped1 tsp. butter1/2 can solid-packed Albacore tuna2 Tbs. low-fat cream cheese1 tsp. flour1/3 cup 1% milk2 Tbs. reduced-fat sour cream
Boil noodles in salted water.
Finely chop celery and mushrooms.
Saute in tsp. butter until vegetables are wilted. Sprinkle with salt, pepper, and 1 tsp. of flour. Stir to incorporate all over medium heat.
Stir in milk and and continue to stir until mixture comes to a boil and thickens. Add cubed cream cheese, tuna, and cooked, drained noodles. Removed from heat and add sour cream. Taste for seasoning.
Serving Size: makes about 2 2-cup servings
