Vegan Garlic Lentil Soup

Ingredients
6 cups veggie broth2 medium carrots (sliced into rounds)1 cup red lentils2 medium/large onions4 cloves of garlic2 tbls olive oil2 tbls red wine vinegar1 bay leaf2 tbls italian seasoning
Directions
Dice onions and garlic and saute in olive oil. Once onions and soft, add the broth, lentils, carrots, bay leaf, italian seasoning. Bring to a boil then turn heat down low and cover pot. Let simmer 1.5 hours. Remove bay leaf and add red wine vinegar. Enjoy!
