Low fat & low cal *vegan* Banana Muffins

bananas, oatmeal, apple sauce, baking powder, baking soda, maple syrup, whole wheat flour, vanilla, cinnamon
Mash 3-4 bananas to get it equivalent to 1 cup. Mix 1/2 c apple sauce with it, add 1/4 c maple syrup, 1 tsp vanilla flavoring and 1 tsp cinnamon.
In a separate bowl mix 1 c whole wheat flour with 1 c oatmeal (ground in a blender or leave it whole). Add 2 tsp baking powder and 1/2 tsp baking soda.
Mix wet ingredients with the dry ones and blend just until it's all well mixed.
Pour into muffin cups (slightly sprayed with pam) and bake at 375 F for 18 minutes.
Serving Size: Makes 12 muffins
