Vegetable quinoa salad

Ingredients
rinse and cook 1 cup of quinoa. While quinoa is cooking, mix oil, vinegar, mustard, maple syrup in large bowl for the dressing, Chop vegetables and set aside until quinoa is done. When quinoa is done, fluff and add to bowl with dressing mixture, toss to coat and add vegetables, mix and chill for two hours.Note, any colorful raw vegetables may be used, and honey can be used instead of maple syrup in dressing. Diced chicken or shrimp may be added if desired
