4 eggs1/4 cup coconut flour1/4 cup coconut milk (full fat, NOT 'light')1 Tbsp. honey1/4 tsp. vanilla1 pinch nutmeg1 pinch cinnamon (1/4 tsp. at least)
Mix ingredients and let them sit for at least 5 minutes (10-15 minutes is even better; flour lumps soften and will disappear when whisked). Oil/ grease pan [electric skillet or griddle works well] with coconut oil; heat over medium heat (325 -350 in electric skillet). Pour scant 1/4 cup of batter for each crepe; allow to set/ brown before flipping.
