Tropical Shrimp salad

Ingredients
12 large Shrimp, cooked1 Mangos1/2 small fresh Pineapple or about 2 cups1 red pepper2 Tbsp Orange Juice2 Tbsp Lime Juice1 Tbsp Olive OilWater
Directions
Cook the shrimp in boilng water for a few minutes, or use pre-cooked shrimp.

Dice up the shrimp and mango into bite size pieces. Chunk up the pineapple and place in a food processor along with the orange juice and lime juice. Add a bit of salt and pepper. While processor is on, drizzle in olive oil and water if needed to thin. Divide into 4 portions and server over lettuce.
