Tim's Ragu - Turkey

Medium-Large Onion (chopped)Olive Oil2 stalks Celery (diced)2 Carrots (diced)3/4 lb Ground Turkey (93% lean)1 cup Dry white wine1/2 cup milk1/8 tsp freshly ground nutmeg2 cans whole peeled tomatoes
Heat the oil over medium heat and then saute the onion until it softens but does not brown.
Add the celery and carrots to the above and saute for three to four minutes.
Add the ground turkey and salt and cook until browned.
Add white wine. Cook until it evaporates.
Add the milk and nutmeg (I actually use closer to 1/2 tsp). Cook until it evaporates.
Add tomatoes (I use the big cans like 24-28oz).
Mash the tomatoes into the sauce and then simmer for at least one hour preferably much longer.
