Easy Chicken Skillet

Ingredients
1 1/2 pounds boneless, skinless chicken breast - fat cut off1 cup skim milk1/2 cup chicken stock1 cup mushrooms, white - sliced1 bag (10 oz.) spinach3 Roma (Italian) tomatoes1 medium onion
Directions
Get out a big frying pan or skillet, spray with cooking spray. Cut chicken into 6 equal pieces. Brown chicken for about 2 minutes on each side. Add the chicken stock, milk, and chopped onion, cook about 5 minutes or until onion is soft. Add all of the spinach, stir in until wilting begins. Add mushrooms and chopped tomatoes. Cook about 10-15 minutes or until chicken is no longer pink and spinach is wilted in.

Makes 6 servings - about a cup each.
