1 whole Hard Boiled Egg1 wedge The Laughing Cow Light Creamy Swiss1 teaspoon Yellow MustardOptional: crackers/bread of your choice (amount depends upon size)Vegetable sticks
Cook hard boiled eggs. (it is better to make a large batch you can use during the week for breakfasts and snacks, but you could also just make one if you needed to.)
Peel and mash 1 hard boiled egg with a fork.
Add 1 wedge of The Laughing Cow Light Creamy Swiss.
Mash together along with a little yellow mustard to taste.
Add salt and pepper to taste also if you’d like.
Spread on toast or crackers. To make this snack carb lite you can also choose to serve egg salad with veggie sticks and cucmber slices.
Serving Size: Depends on the size of crackers. Approx. 4 saltine crackers worth
