Broccoli Soup from Scratch

Ingredients
8 cups of broccoli5 tbspns of butter 1 onion2 cups of milk3 tblspn of flour3 cups of beef brothCheese if you desire
Directions
in a big pot put 2 tablespoons of butter, chop up your onion and throw it in on medium heat til it starts to brown add 8 cups of broccoli florets 3 cups of beef broth/stock cover and let simmer for half an hour. In a frying pan melt 3 tablespoons of butter add 3 tablespoons of flour and mix, once blended add 2 cups of milk to make a rue *roo.. add cheese to the rue, bring to a boil reduce heat, stirring constantly * very important don't wallk away as it thickens up fast. once thickened to the point where when you stir it you can see the bottom of the pan, add it to the broccoli mix. Stir in and bring to a boil again for a few minutes, serve.
